Established over 50 years ago and devoted exclusively to Italian varietals, , Fox Hill Vineyard is located on the East side of the Ukiah Basin. “Piccola” is a wine blended from Cortese, a grape native to the Piedmont region and Tocai Friulano, native to Friuli, in the sub alpine hills between Venice and Trieste.
The grapes are picked at daybreak and are still cold after transport to the winery. They are destemmed and pressed lightly for two cycles. The juice is then chilled for two days, racked off the sediment, inoculated and fermented in stainless at 15oC. A slight tartaric acid adjustment corrects the pH and total acidity. After racking off the lees, the wine remains in a stainless steel tank until bottling, usually before the holiday season.
Delicate aromas of honeysuckle and lilac. The wine was “finished” at 0.5% residual sugar, just above the threshold of “sweetness.” A slight amount of naturally dissolved CO2 was maintained during bottling to enhance the fresh floral character.
